De Waaghals
A pioneering vegetarian restaurant in De Pijp since 1981 — refined, vegetable-led cooking with a changing seasonal surprise menu and no meat substitutes.

On the Frans Halsstraat in De Pijp, De Waaghals — 'the daredevil' — has been a pioneer of vegetarian dining in Amsterdam since 1981. The atmosphere is informal but the cooking is refined and creative, and it draws vegetarians, vegans and curious omnivores alike.
Tellingly, the kitchen avoids meat substitutes altogether, building original dishes around vegetables instead, with ingredients that are organic and locally sourced as much as possible — extending to the wines and juices.
The food
The menu is a 3- or 4-course surprise that changes with the season (roughly every couple of weeks), drawing on flavours from around the world, with a monthly specialty platter spotlighting a different country. Because it's a surprise format, you let the kitchen lead — and vegan options are always available.
Good to know
It's dinner-only and popular, so booking ahead is recommended. Come with an open mind and an appetite for inventive, vegetable-forward cooking rather than familiar veggie standards.
