Restaurant Blauw, just west of the Vondelpark, is many Amsterdammers' answer to where to eat Indonesian — a cuisine woven deep into Dutch food culture through the country's shared history.
The thing to order is the rijsttafel, or “rice table”: a parade of small dishes — beef rendang, satay, sambals, vegetables and more — built around rice, so you can taste a whole spread in one sitting. Vegetarian versions are available, and the kitchen doesn't shy away from spice.
