De la Mer runs the least starchy Michelin star in town: most seats line a long counter facing the kitchen, neighbours become table companions, and the cooking stays laser-focused on the sea — pristine Zeeuwse Creuse oysters, sea bass with wasabi ice cream and oxtail vinaigrette, dishes built on contrast rather than ceremony. Pricing is notably fair for starred cooking, it's one of the few starred rooms open seven days including lunch, and solo diners are genuinely well served here. Book the counter; that's the point.
