Flore

Flore is the most decorated table in the city centre: two Michelin stars plus a Green Star for chef Bas van Kranen's "conscious" cooking — plant-forward, Dutch-sourced, fermentation-literate — served in a pared-back room at Hotel De L'Europe with the Amstel outside the windows. The chef's table looks onto canal, room and open kitchen at once. Vegetarians aren't accommodated here; they're the point. Friday and Saturday add lunch sittings — the gentler way into a serious commitment.
