No neon, no sign worth mentioning — HPS hides on a quiet Rapenburg corner and rewards those who find it with some of the city's most inventive drinks: a truffled-honey old fashioned, smoked and flamed serves, a menu that explains its own philosophy. The room is small, candle-dark and best experienced from the bar, where the making is half the show. Weekends run to three in the morning, which makes it both the ideal opener and the ideal final act. Reserve, or arrive early and hope.
