Daalder is one of Amsterdam's most quietly serious kitchens dressed up as its most playful room. Set in the landmark Het Sieraad building on the Postjesweg in the west of the city, it pairs a one-Michelin-star kitchen with neon lights, street art and an open 'cooking stage' you can watch in action.
Chef Dennis Huwaë — who previously cooked in two-star kitchens — draws on his Indonesian roots and broader Asian influences for inventive, contrast-driven dishes. The format is tasting-menu led: the six-course Daalder Experience, the more personal 'Dennis' Favourites', and à la carte options.
Expect signatures like the beet ravioli and the stroopwafel ice-cream sandwich, an excellent wine pairing, and a canalside terrace in summer. Book ahead — it is small and popular.
