Ron Blaauw once handed back two Michelin stars to cook the way he wanted — and won one back on his own terms. The gastrobar formula: signature dishes at flat, honest prices, ordered to share — the spareribs with a cult following, Korean fried chicken, wagyu with bone marrow, and an oyster-and-ham cart that rolls to your table. The room by the Vondelpark's southern edge stays relaxed where the cooking stays starred, lunch through late evening, seven days a week.
